Baked Potatoes & Salmon with Deconstructed Guacamole

This is a simple new recipe I came up with for dinner last night, in which I put together some of my favourite ingredients: salmon, potatoes and avocado.The longest part of the process was roasting the potatoes, but all in all, the recipe is easy.

What you'll need (for 2 portions):

1 avocado

2 salmon filets

500kg of small potaoes (scrubbed)

1/2 white onion

1 lime (juiced)

2 tbsp of mustard

6 tbsp of extra virgin olive oil

Salt

Pepper

Herbs

For the guacamole:

Peel the avocado and remove the ...

Cut the avocado into small squares and reserve in a small bowl.

Take the half onion and cut it into another half and chop it into very small dice and add to the bown of avocado. Then, take the juiced lime, 2 tbsp of olive oil, salt and pepper (to taste) and mix it all up in the bowl. Reserve.

Preheat your oven.



For the salmon and potatoes:


Put your potatoes in a large bowl. Mix in the herbs, salt, pepper, garlic and olive oil then pour over the potatoes. Add an additional pinch of salt and pepper and stir with a ladden spoon to make sure each potato is coated.

Add the potatoes to a baking dish and roast until they're tender and golden (about 1h).


Lather the filets in the mustard, add a pinch of salt and pepper to each side of the filet and finish with 1 tbsp of olive oil on each filet. Garnish with the rest of the chopped onions. Lay the salmon filets in the large baking dish about 45mins after the potatoes, and cook for about 15-20mins.


Check both until cooked.

Serve (very!) warm.
