I Quiche You Not!

Today, I was toolazy to cook something very elaborate.
Luckily, I had all the ingredients needed to make one of the simplest dishes EVER: Quiche Lorraine.
One of my favourite dishes because of its simplicity and its use of some yummy ingredients.
Now, I always have 1 or 2 store-bought puff pastry at home, specifically for this (you can make your own but it defeats the purpose of being lazy innit!).
What you'll need:
1 puff pastry
1 pack of smoked bacon
2 slices of pancetta or ham (optional)
1/2 onion or 1 shallot
200ml of heavy liquid cream
3 eggs
Salt and pepper to taste
Herbs mix (optional)
1 small pack of grated Emmental cheese
Preheat oven to 175 C.
Heat up a medium-sized pan and add the cut up bacon and ham. Let it cook with the oil of the bacon.
Add shallots and or onions.

While it's cooking, unroll the puff pastry into a pie mould, prick all over with fork and put in the oven to pre-cook for about 5-10mins.

Remove the pan from heat when everything has cooked throughly and browned a little.
Reserve.
In a large bowl, add the eggs, cream, seasoning and whisk until everything is incorporated.
When the pastry starts to elevate, remove from oven and let cool for a few minutes.
Add the bacon, ham and onions first over the pastry. Proceed by adding the egg and cream mixture.
Top with grated Emmental cheese (the more the better!).

Put the quiche back in the oven and let cook for about 30mins (until it's golden brown on top).
Remove from oven and serve warm.
